Calle 23 Blanco Tequila is an unaged, 100% agave tequila, bottled in distinctive packaging adorned with red agave leaves.
The agave is sourced from the Highland region of Los Altos de Jalisco, between Tepatitlán and Arandas, and harvested at around seven years old, weighing approximately 40 kg each. They are slow-cooked at low pressure in stainless steel autoclaves for seven hours, then allowed to cool for an additional three hours.
Fermentation is carried out in large stainless steel tanks using a blend of natural and cultured yeasts derived from agave juice, before a double distillation in stainless steel pot stills with copper fittings.
