De druiven worden ’s ochtends vroeg geoogst zodat ze koel en fris blijven, en worden na aankomst in de wijnkelder tweemaal nagekeken op mindere druiven en andere onrechtmatigheden. Na het ontstelen worden de cinsault, grenache en rolle voorzichtig geperst. Voor de syrahdruiven wordt de saignéemethode gebruikt: de druiven worden gekneusd en krijgen een korte inweking samen met het sap; waarna het sap afloopt en verder vergist. 95% van de wijn rijpt op gekoelde roestvrijstalen tanks; 5% gaat met het gistbezinksel op vat, waarbij de gist regelmatig wordt omgeroerd (bâtonnage). Na het blenden wordt de wijn gebotteld in de kenmerkende Miraval-fles.
