For those who like their coffee with presence. Black Rabbit is our slightly darker house blend. Developed for depth, body, and a smooth, lingering finish without bitterness.
The hero of this blend is an organic, direct-trade coffee from the highlands of Timor-Leste. Produced by Cooperativa Café Timor (CCT), a cooperative uniting over 20,000 small-scale family farms across the Ermera and Ainaro districts, this coffee carries real weight, both in the cup and in its impact. CCT is the largest private health provider in Timor-Leste, operating over 30 clinics and reaching around 20,000 farmers each month. Since its founding in 1994, the cooperative has provided over two million health consultations. Every cup of Black Rabbit directly supports sustainable livelihoods and community wellbeing in one of Southeast Asia's youngest nations.
Coffee is cultivated at 1,200-1,600 metres above sea level in fertile volcanic soils, where highland conditions support specialty Arabica production. Beans are carefully sorted by hand to ensure quality and consistency at every stage.
We pair the Timor-Leste with two high-altitude washed Colombians. From the Nariño department, one of Colombia's most prized specialty regions at 1,800–2,100 metres on volcanic ash soils, comes caramel sweetness and warm spice. From the Tierradentro region of Cauca, indigenous smallholder farmers add plum depth and clean structure to the cup.
Each origin is roasted separately to a profile that brings out its best qualities, then blended post-roast. The result is a full-bodied cup with dark cocoa, brown sugar, and a long aftertaste that stays with you. Roasted slightly darker than our other blends, but still remarkably smooth with excellent depth of flavour.
Freshness & Transparency: Every bag of Rabbit Island Coffee purchased on our website features a clearly marked roast date, so you know exactly when your coffee was roasted. We ship our coffee fresh, but for the best flavour and optimal extraction, we recommend brewing it 5-21 days after the roast date.
